Sausage Balls (Our Christmas Morning Tradition)

Every December — and I truly mean every December — one of my girls calls me from the grocery store and asks the same thing:

“Mom… how much cheese do I need for sausage balls?”

It makes me smile every time, because it’s such a perfect snapshot of motherhood: we raise them, we feed them, we hand down our best recipes… and somehow they still need us when they get to the dairy aisle.

  • 2 cups Bisquick
  • 1 lb breakfast sausage (mild or hot)
  • 4 cups sharp cheddar cheese, shredded
  • ¼ cup milk (more if mixture feels dry)

🥣 How to Make Them

  1. Mix everything together. You can use a mixer with a dough hook, or your hands like a true Granny. If the mixture feels too dry to hold a shape, add a splash more milk.
  2. Roll into 1-inch balls. A cookie scoop works wonders here.
  3. Bake at 350°F for 17–20 minutes. They should be lightly golden and sizzling.
  4. Serve warm — ideally with country gravy. Yes, this part is non-negotiable in our house. A ladle of warm, peppery white gravy turns these from “yummy” to “oh my word, where have these been all my life?”

🍽️ How We Serve Them on Christmas Morning

We make the sausage balls the day before (sometimes days before!) and refrigerate or freeze them raw.

On Christmas morning:

  • The coffee brews
  • The kids whisper-shout while trying to peek in stockings
  • Grampy turns on the tree lights
  • And I slide a tray of sausage balls into the oven

While they bake, I warm up a quick skillet of country gravy.
Nothing fancy — just good old-fashioned southern white gravy with plenty of black pepper.

It’s the easiest holiday breakfast tradition we have, and one of the most loved.

  • Refrigerate: Up to 2 days before baking
  • Freeze unbaked balls: Freeze on a tray, then store in a bag. Bake frozen — just add 3–4 minutes.
  • Freeze baked balls: Reheat at 350°F for 10 minutes

  • Use hot sausage for a spicy version
  • Mix cheddar + pepper jack
  • Add green onion or minced jalapeño
  • A pinch of garlic powder
  • Make mini versions for parties
  • Serve with barbecue sauce or honey mustard (but gravy is superior!)

Both my daughters can make these sausage balls perfectly… and yet every single Christmas season, I get at least one call or text where they ask:

And I absolutely love it.

Sausage Balls (Christmas Morning Favorite)

Easy sausage balls made with Bisquick, sausage, cheese, and a little milk—perfect for Christmas morning, brunch, or freezer meal prep. They bake up tender, cheesy, and delicious, especially served with country gravy.

Ingredients

  • 1 pound breakfast sausage (mild or hot)
  • 4 cups shredded sharp cheddar cheese
  • 2 cups Bisquick baking mix
  • ¼ cup milk, as needed

Instructions

  • Preheat oven to 350°F. Line a baking sheet with parchment paper.
  • In a large bowl, combine the sausage, shredded cheddar, and Bisquick.
  • Mix with your hands until mostly combined. If the mixture feels too dry to hold together, add 2–3 tablespoons of milk until it forms a soft dough.
  • Roll into 1-inch balls (or scoop with a cookie scoop) and place on the prepared baking sheet.

  1. Thank you for this recipe! I think it’s a Southern thing and I’m a Yankee but I’ve tried these a couple of times and they were so greasy – I’m going to try yours because sausage balls sound delicious! 😉
