Cream the softened butter and honey together until the mixture is light and fluffy. Because you’re creaming butter with honey rather than granulated sugar, it won’t look exactly like the creamed butter and sugar you’re used to seeing in a cookie recipe. That’s okay.

Add the egg and vanilla and beat until everything is well combined.

In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Add the dry ingredients to the butter and honey mixture and stir until combined.

Next, stir in the quick oats, coconut, and chopped nuts.

Spread the mixture evenly into your prepared baking pan. The batter will be fairly thick, so use a spatula or the back of a spoon to gently spread it all the way to the edges.

The original recipe says to cut them into approximately 1½ x 2½-inch bars and makes about 30. You can, of course, cut yours into whatever size makes sense at your house. Granny is not coming over with a ruler.

  • Keep an eye on them toward the end of baking. Honey can brown fairly quickly, and you want these chewy rather than dry. Start checking at about the 20-minute mark.
  • Let them cool before cutting. They’ll set up as they cool and you’ll get much neater bars.
  • Use the nuts you like—or already have. The original recipe uses almonds. I used pecans this time, and walnuts are another good choice.
  • Use a honey you enjoy. Since honey is the primary sweetener, its flavor actually comes through in the finished bars.

  • Chocolate Chip: Stir in about ½ cup of semisweet chocolate chips.
  • Cranberry Pecan: Add ½ cup dried cranberries and use pecans. Wonderful for fall or Christmas.
