Honey Oatmeal Chews

Chewy, buttery oatmeal bars sweetened with honey and filled with coconut and crunchy pecans. These simple old-fashioned treats are easy to make and perfect with a cold glass of milk. Makes 24 bars.

Ingredients

  • ½ cup butter
  • ¾ cup honey
  • 1 egg
  • 1 teaspoon vanilla extract
  • cup flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup quick-cooking oatmeal
  • 1 cup unsweetened shredded coconut
  • ½ cup chopped nuts (walnuts, pecans, or almonds)

Instructions

  • Preheat the oven to 350°F. Grease a 9×13-inch baking dish.
  • In a large mixing bowl, cream together the softened butter and honey until smooth and well combined.
  • Beat in the eggs and vanilla.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the butter mixture, mixing just until combined.
  • Stir in the oats, coconut, and chopped nuts.
  • Spread the mixture evenly in the prepared baking dish.
  • Bake 20-25 minutes, until the edges are lightly golden and the center is set.
  • Let cool in the pan before cutting into bars.

Notes

  • Coconut: Unsweetened coconut keeps these from becoming overly sweet and lets the honey flavor shine.
  • Nuts: Walnuts, almonds or pecans may be used. Sunflower seeds are also good.
  • Storage: Store the cooled chews in an airtight container at room temperature.
  • Cutting: Let them cool before slicing so you get nice, tidy bars instead of delicious oatmeal rubble. 😂
