The Best Fluffy Pancakes

Equipment

  • Large mixing bowl
  • Small mixing bowl
  • Griddle or frying pan

Ingredients

  • 4 cups flour
  • 1/4 cup sugar
  • 3 1/2 tablespoons baking powder
  • 1/2 teaspoon salt
  • 3 cups milk or buttermilk
  • 4 eggs
  • 1/2 cup cooking oil
  • 2 teaspoons vanilla
  • 1/2 teaspoon cinnamon
  • Add-ins: Blueberries, chocolate chips, etc., optional

Instructions

  • In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, cinnamon, and salt.
  • In a separate bowl, combine the wet ingredients: milk, eggs, cooking oil, and vanilla.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined. The batter should be slightly lumpy. Do not overmix! This will make your pancakes flat and tough!
  • Heat a nonstick skillet or griddle over medium heat and lightly grease it. Pour about ΒΌ cup of batter per pancake.
  • Cook until bubbles form on top, then flip and cook until golden brown on both sides.
