Ham and Green Chile Breakfast Casserole
The perfect way to use up that leftover ham. Good for breakfast, lunch or dinner!

Ingredients
6
cups
frozen hash browns
1-1/2
cups
cubed cooked ham, or breakfast sausage
1
cup
shredded cheese
sprinkle of
chives, minced onion, or sliced green onion
4
oz can
chopped green chile
4
eggs
12
oz can
evaporated milk
salt and pepper
to taste
Instructions
Spray a 9 x 13 baking dish with cooking spray
Layer the hash browns, ham, cheese, onions or chives and green chile in the pan.
Mix the eggs, milk, salt and pepper together.
Pour the egg mixture over the potato mixture.
Bake in a 350° oven for one hour or until the eggs in the middle are done.
