Grampy's Kidney Bean Salad

A vintage, protein-packed salad that’s simple, satisfying, and perfect for picnics or family dinners.

Ingredients

  • 2 cans kidney beans, drained and rinsed
  • I cup shredded cheddar cheese
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons water
  • ¾ cup Miracle Whip or mayonnaise
  • ¼ cup chopped onion (or 1 tablespoon dried minced onion)
  • 1 tablespoon dried chives
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  • In a medium bowl, gently stir together all ingredients.
  • Cover the bowl and chill the salad for at least four hours before serving to let the flavors blend. Overnight is best. Stir it a couple of times.
