Easy Marshmallow Salad

An old-fashioned Jell-O salad recipe to bring back memories of the good old days. Six ingredients and a quick prep time make this recipe a winner.

Ingredients

  • 16 oz container of cottage cheese
  • 3 oz package cherry Jell-O (you will use 2 tablespoons, or to taste)
  • 8 oz container Cool Whip, thawed
  • 15 oz can mandarin oranges, well-drained
  • ½ cup chopped pecans
  • 2 cups miniature marshmallows

Instructions

  • Stir the cottage cheese and cherry Jell-O together until they are well-combined. A large spatula works well for this.
  • Fold in the Cool Whip. Mix gently until blended.
  • Fold in the mandarin oranges and chopped pecans.
  • Cover and refrigerate for two hours.
  • Before serving, gently mix in the 2 cups of miniature marshmallows.
  • Transfer to a serving dish. Garnish with extra mandarin oranges, mini marshmallows, and a sprinkle of chopped pecans. Enjoy!
