Ingredients

medium potatoes,
about 2 pounds

chopped onion

cup
sweet gherkin pickles,
chopped
1¼
cups
mayonnaise
or salad dressing
1
tablespoon
vinegar
1
tablespoon
Dijon-style mustard
or regular mustard

teaspoon
salt
½
teaspoon
pepper
Paprika for garnish
Instructions
In a covered saucepan, cook potatoes in boiling water for 20–25 minutes, until just tender.
Drain well.
In a large bowl, combine onion, sweet gherkins, mayonnaise, vinegar, mustard, salt, and pepper.
Add potatoes and toss gently to combine.
Cover and chill for 6–24 hours before serving.
Garnish with a sprinkle of paprika before serving.
