Creamy Classic Potato Salad

A creamy old-fashioned potato salad made with tender potatoes, chopped gherkins, and a simple tangy dressing. This easy family favorite is perfect for birthdays, BBQs, potlucks, and cozy homemade meals.

Ingredients

  • 6 medium potatoes, about 2 pounds
  • cup chopped onion
  • ¾ cup sweet gherkin pickles, chopped
  • cups mayonnaise or salad dressing
  • 1 tablespoon vinegar
  • 1 tablespoon Dijon-style mustard or regular mustard
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • Paprika for garnish

Instructions

  • In a covered saucepan, cook potatoes in boiling water for 20–25 minutes, until just tender.
  • Drain well.
  • In a large bowl, combine onion, sweet gherkins, mayonnaise, vinegar, mustard, salt, and pepper.
  • Add potatoes and toss gently to combine.
  • Cover and chill for 6–24 hours before serving.
  • Garnish with a sprinkle of paprika before serving.
