Cozy Sausage, Pepper & Potato Bake (Italian Dressing Version)

Equipment

  • Large baking dish or sheet pan
  • Cutting board
  • Mixing spoon or spatula
  • Parchment paper (optional)

Ingredients

  • 12–14 oz smoked sausage
  • 4 cups diced potatoes
  • 3 bell peppers, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • ½–¾ cup Italian dressing

Instructions

  • Preheat oven to 400–425°F.
  • Add sausage, potatoes, peppers, and onion to a sheet pan.
  • Drizzle with dressing and toss.
  • Bake 30 minutes, stir.
  • Bake 15-30 minutes more.

Notes

  • Use regular Italian dressing, not light — the oil helps everything brown and crisp.
  • If the potatoes are large, cut them into ¾–1 inch pieces so they roast evenly.
  • You can use turkey sausage or hot Italian sausage for a different flavor.
  • For extra veggies, add mushrooms or zucchini during the last 15 minutes.
  • If you want everything extra crispy, finish the pan under the broiler for 2–3 minutes, watching closely.
