- 1 cup rice
- 1 can black or pinto beans, drained
- 1 tbsp butter
- Garlic powder + onion powder
- Salt & pepper
- A squeeze of lime or splash of vinegar
- Taco seasoning (optional)
Optional toppings:
Shredded cheese, salsa, sour cream, chopped onion, avocado, or tortilla chips.
How to Make It
- Cook rice (stovetop or instant pot).
- Warm beans in a pan with butter + spices.
- Stir beans into rice or serve side-by-side.
- Add any toppings you’ve got. Even a handful of tortilla chips makes magic.

3. Breakfast-for-Dinner Scramble (A Tired Homemaker Classic)
Eggs save the day. They just do.

Ingredients
- 6–8 eggs

- Bread or toast on the side
