Baked Oatmeal

Make ahead for a quick and easy breakfast! This recipe is easy to customize with things your family likes.

Ingredients

  • 3 cups old-fashioned oats
  • 3/4 cup brown sugar
  • 1/3 cup unsweetened flaked coconut
  • 2 tsp ground cinnamon
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • 1/2 cup butter, melted
  • 2 eggs
  • 2 tsp vanilla
  • 3/4 cup dried cranberries, cherries or raisins
  • 1/2 cup chopped nuts

Instructions

  • Preheat oven to 350°.
  • In a large bowl, mix together the oatmeal, brown sugar, coconut, cinnamon, baking powder and salt.
  • In another bowl, whisk together the milk, melted butter, eggs and vanilla.
  • Add the wet ingredients to the dry ingredients and mix well.
  • Then stir in the dried cranberries and chopped nuts.
  • Spread into a 9 x 13 baking dish sprayed with cooking spray.
  • Bake for 35-40 minutes.
