Baked Oatmeal

- 3 cups old-fashioned oats
- 3/4 cup brown sugar
- 1/3 cup unsweetened flaked coconut
- 2 tsp ground cinnamon
- 2 tsp baking powder
- 1 tsp salt
- 1 cup milk
- 1/2 cup butter, melted
- 2 eggs
- 2 tsp vanilla
- 3/4 cup dried cranberries, cherries or raisins
- 1/2 cup chopped nuts
Preheat oven to 350°.
In a large bowl, mix together the oatmeal, brown sugar, coconut, cinnamon, baking powder and salt.
In another bowl, whisk together the milk, melted butter, eggs and vanilla.
Add the wet ingredients to the dry ingredients and mix well.
Then stir in the dried cranberries and chopped nuts.
Spread into a 9 x 13 baking dish sprayed with cooking spray.
Bake for 35-40 minutes.
