A Family Favorite: Sloppy Joe Tater Tot Casserole

You know those meals that make everyone gather around the table a little faster? This is one of those. My Sloppy Joe Tater Tot Casserole is pure weeknight comfort — simple, hearty, and a guaranteed hit whether you’re feeding grandkids, grown kids, or just you and Grampy on a cozy night in.

It starts with the classic sloppy joe “goop” — that saucy, tangy beef mixture that smells like childhood — layered in a 9×13 dish, topped with golden tater tots, and baked until bubbly. Then, right before it’s done, a sprinkle of melted cheese brings it all home.

And because you know I can’t resist playing around in the kitchen, there are plenty of ways to mix things up. Add a handful of corn for sweetness, toss in green chiles for a little zip, or sneak in a few veggies for good measure. Around here, we call that “budget-friendly creativity.”

  • 2 pounds ground beef or ground turkey
  • 1 large onion, diced
  • 1-1/2 cups ketchup
  • 1/4 cup chili sauce or mild salsa
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons yellow mustard
  • 2 tablespoons vinegar
  • 2 tablespoons sugar
  • 1 bag (about 32 oz) frozen tater tots (you’ll use about half)
  • 1–2 cups shredded cheddar or cheese blend
  • Salt and pepper to taste

  1. Preheat oven to 400°F.
  2. In a large skillet or dutch oven, brown the ground beef and onion. Drain if needed.

  1. Add the ketchup, chili sauce, Worcestershire sauce, mustard, vinegar, and sugar and stir well.
  2. Let the mixture simmer for 5-10 minutes on low heat, stirring occasionally.

  1. Spread mixture in a greased 9×13 baking dish.
  2. Arrange tater tots evenly on top — the neater you line them up, the cozier it looks! You can add a sprinkle of cheese on top of the filling before you add the tater tots if you want to.

  1. Bake uncovered for 25–30 minutes, until the tots are golden and crisp.
  2. Sprinkle cheese on top and bake 5 more minutes, until melted and bubbly.
