Savings and Goals Journal #28

Last week, I shared my Goals for 2021. I’m hoping by stating them here on the blog, I will be more likely to stick with them. I don’t give up; I get distracted. 🙂

I tried to make my goals achievable, reminding myself that a little bit of progress is still progress. If you’re working toward a goal and you slip backwards or slow down a little bit, you’re still moving forward in the big picture. So keep going!

Now, then! On to this week’s update:

In the Kitchen

I love the challenge of feeding my family from the pantry and freezers. It makes me be more creative in the kitchen to be sure I’m using the things we have. I tend to get stuck making the same type of things regularly.

We made one trip for the store for milk and produce (and potato chips for Grampy. 🙂 )

Ham and Green Chile Breakfast Casserole

Once again, last week’s lentil tacos did not happen. This is the second time I put them on the menu and did not make them because we had leftovers. Maybe next time I will plan them at the beginning of the week. We are going to try them someday!

This week’s meal plan:

  • Sunday: Hamburger patties, rice, steamed veggies
  • Monday: Pumpkin soup, cornbread
  • Tuesday: Leftovers
  • Wednesday: Chicken Stuffing Bake, glazed carrots
  • Thursday: Leftovers
  • Friday: Ham and Green Chile Breakfast Casserole , biscuits
  • Saturday: Leftovers

In the Garden

Not much happening in the garden, because it is really cold out! I’m content to be inside drinking tea and working on garden planning.

Fresh eggs! I’ve been waiting weeks for these!

My chickens are starting to lay eggs again, which makes me so happy! Not many, but I have gotten two eggs the last two days. So that’s a huge improvement for the old girls!

Home and Family

Last week was filled with appointments every single day. I was either going to an appointment or watching the grandkids while my daughter went to one. Weeks like those make it hard for me to stay organized. I like my routine!

I did manage to make some progress on my laundry area project. I’ve watched a few too many YouTube home decor videos, so I want to go buy all the things! But I am keeping the budget in mind, so some things are going to wait and will be easy to add when I find the perfect thing at the perfect price.

I will eventually change the cabinet knobs and maybe find pretty dispensers for laundry detergent and fabric softener. (I like this idea.) I’d also like to change the shelf to a stained wood one. But for now I am focusing on getting the cabinet doors up, getting the painting and trim finished and removing some of the clutter.
